They cover the cast iron with two coats of enamel and then fire it for a particularly strong product and a better all-around look. The company has applied their knowledge of coatings to oven mitts and created a “Best Of” that's covered in Teflon, the no-stick material that sloppy (or should we say "enthusiastic"?) cooks have come to love.
