He uses Cocobolo wood for the handles of his knives because he loves how it feels in your hand and how it ages. The secret to his knives though is the steel and extensive heat treatment each piece gets during its creation. Every piece is specially treated one at a time in a seven step process that takes more than six hours to complete. Even though these "Best Ofs" are hand crafted, Kramer Knives still has a wide selection so you can get your kitchen's essentials.

  • Handmade Custom kitchen knives by Master Bladesmith Bob Kramer. 10 years of professional cooking experience, and 15 years of building custom kitchen knives, combined make the finest culinary knives on the planet.
  • The default wood is Cocobolo, this a Rosewood which comes from the equatorial zones. This wood is rich in oils and is hard with an interwoven grain all good reasons to be used on a kitchen knife. I can use plastic for the handles which of course is very stable but I love the feel of wood and the way it ages.

there is a two year waiting list for these knives. They are primarily used by career chefs, and the like. It has been told that Mr. kramer himself contacts his customers before starting to work on their knives, to discuss weight and feel of the knives. They are full tang and 200+ layered damascus steel. Truely works of art by a most talented and disciplined professional.

I am afraid that there is a huge difference between the knives shown on the TV today (11/22/09) and the Shun produced ones. Can Shun knives cut steel and one inch rope with a songle swipe like shown on TVby Kramer?

I think kramerknives.com is completely overwhelmed by too many hits. If there was a 2 year waiting list before Sunday Morning there's probably more orders than Kramer can fill in his lifetime, now! Anybody know of another truly great knife?
